Dorothy's Cheesecake
I am known for making this cheesecake. The recipe was found by a dear friend, Dorothy in the Cincinnati Post. I fondly call it Dorothy's
Ingredients
Two 8 oz packages of cream cheese (use any brand. I like Philly as it is consistently smoother)
Three eggs
1/2 tsp. Vanilla
2/3 cup sugar
Let cream cheese set out at least 4 hours so that it is room temperature (if not cake will be grainy texture).
Beat all ingredients together until creamy. Pour ingredients into greased (I spray with oil) square 9 inch baking dish.
Bake at 350 degrees for 25 minutes. It will have a golden crust. Cool cake for 20 before adding topping.
Topping
8 ounces sour cream
6 TBsp. sugar
2 tsp. Vanilla
Mix ingredients until smooth. Pour on cake that has been cooled no less than 20 minutes. Back at 350 degrees for another 10 minutes. May top with cherry pie filled or glazed strawberries on top of sour cram topping once cooled if you like.
When I make this recipe I cut back on the sugar.

Cowboy Caviar
This is a wonderful spicy, cold dish served with tortilla chips. Delightful in the summer.
Ingredients
1 can white corn 1 can black beans
1/2 cup finely chopped purple onions 2 cans Rotelle diced tomatoes (choose whatever combination you like. For extra spicy 1 can with Habaneros and 1 can green chili.
For milder 1 can green chili and 1 can cilantro and lime
Finely chopped garlic to taste
Optional chopped cilantro
Chill before serving. The dish is better after it's had a chance to marinate. You can cheat by chilling cans ahead of time.
Optional Add chopped avocado when ready to serve.
I like to serve this with Tostitos Scoops as it make a perfect delivery system!
